FAQs

How do you know when blondies are cooked? ›

How to know when blondies are done. Remove the blondies from the oven when the edges look dry and set, but the center still looks slightly soft and underdone. If you have a toothpick, when you push it into the center, it should feel soft, but when you remove the toothpick, it should come out relatively clean.

Why are my blondies not cooked in the middle? ›

Try making another batch, here are three ways to fix this:
  • Use a larger pan, the batter will be thinner and cook more evenly.
  • Using the same pan as originally, bake in a cooler oven, 25 degrees or so, for an extra few minutes. ...
  • Check for doneness using a toothpick or wooden skewer.

Why are my blondies falling apart? ›

If your blondies are coming apart in your hands, it's likely for one of three reasons: You didn't aerate the eggs enough. The leading cause of raw, sunken blondies is not whipping enough air into the batter.

Why are my blondies not gooey? ›

If they're not gooey, they were over-baked. Remember that we're letting them cool in the pan completely, so they will continue to cook out of the oven. Remove them from the oven when moist crumbs are still clinging to a toothpick. Why are my blondies cakey?

How do you know when brownies are cooked enough? ›

To test for doneness with a toothpick, insert a toothpick into the center of the brownies and pull it back out. For fudgy brownies, you'll want to see some moist crumbs attached to the toothpick when you pull it back out. If it looks like it's covered in brownie batter, the brownies will need to bake a bit longer.

Can I eat undercooked blondies? ›

So if your blondies are very wet, then they're most likely undercooked. In the UK, eggs with the Red Lion seal of approval are safe to eat raw or undercooked. So you can slightly undercook blondies and brownies if you prefer a fudgier texture.

How do you fix raw brownies in the middle? ›

If the middle is raw but the edges are burning, your oven is too hot. For a standard recipe, cooked in an 8 inch square tin, we'd look to cook the brownies low-and-slow - around 30 minutes at 160C.

How do you fix undercooked brownies? ›

Preheat the oven to 350 degrees Fahrenheit. Place the undercooked brownies back in the baking pan they were originally baked in. Bake for an additional 5-10 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely before cutting and serving.

What to do if middle of brownie isn t cooking? ›

Put them back in the oven: If your brownies are undercooked in the middle, you can put them back in the oven at a lower temperature (around 350 degrees Fahrenheit) and continue baking them until they are cooked through.

What happens if you put too much butter in brownies? ›

Sadly, more butter is not always better. When too much fat is incorporated, brownies become extremely fudgy, in a seriously bad way. They're slick and greasy, two traits you never want to hear when you're talking about baking.

Why are my blonde brownies dry? ›

Do not over-bake the brownies. This recipe shouldn't take longer than 26 minutes to bake so make sure you check on them at 23 minutes. If over-baked, the blondie portion will be dry and crumbly instead of soft and tender.

What's the difference between a blondie and a brownie? ›

Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa. Plus, brownies usually include white sugar instead of brown sugar.

How do you tell if a blondie is undercooked? ›

Baking time: We found that 25 – 28 minutes was perfect for a more soft and gooey center, while 30 to 35 minutes resulted in a more firm center and more golden edges. Visual cues: Blondies are done baking when the middle is slightly jiggly and shiny on top, but the edges look solidified.

What pan is best for blondies? ›

While I think you can still get a good result in a glass pan, your blondies may tend to bake more quickly around the edges and remain soft in the middle. Baking in a metal pan is preferable for a more even bake!

Why did my blondies turn green? ›

It turns out that sunflowers (including the seeds) contain chlorophyll, which reacts with the baking powder/soda in a recipe, and turns the baked product green once cooled. In order to eliminate the green tint, you can add a splash of lemon juice to the wet ingredients, and reduce the leavening in the recipe by half.

Is my brownie raw or gooey? ›

If the brownies still look wet or aren't pulling away, they aren't done. Even fudgy brownies will pull from the edges once they've finished baking. You'll see that the edges look dry while the middle still looks soft or slightly wet. Chewy and cakey brownies will have dry edges with firmer-looking centers.

What should a cooked brownie look like? ›

The first check is a visible check of the brownie tray. You will want to see cooked edges around the tray and a slight shrinking away from the side of the pan. Importantly you should see shiny cracks in the crispy top of the brownie.

Why are my brownies raw in the middle? ›

Lower the oven temperature: One possible reason for the uneven cooking is that your oven temperature is too high. Lowering the temperature can help ensure that the middle of the brownies cooks properly without burning the edges [1]. Reduce the baking time: Another factor to consider is the baking time.

How long does it take for blondies to cool down? ›

Bake for 25-30 minutes, or until the top is golden-brown and shiny (If you like fudgier blondies bake for 25 minutes, for cakier blondies bake for 30 I recommend 25). Place baking pan on a wire cooling rack and let the bars cool in the pan for at least 30 minutes (preferably longer, they hold up better as they cool).
